Apple Cake Recipe
Apple Cake recipe that is NOT the one on the back of this book:
Ingredients
2 cups all-purpose flour (I use King Arthur)
3/4 cup granulated sugar, plus 1 tablespoon for top
1 cup full fat Greek yogurt (I use Trader Joe's honey Greek yogurt)
4 tablespoons canola oil
2 eggs
4 teaspoons baking powder
2 or 3 Cortland apples, sliced
2 teaspoons cinnamon
2 tablespoons of butter
lemon juice
Directions
Preheat oven for 350 F. Butter a 9 inch pan and set aside. Peel and cut apples into thin slices. Toss with lemon juice to avoid discoloration. Set aside. Cream the eggs and sugar with electric mixer until fluffy. Add oil, yogurt, flour, baking powder and mix well. Pour batter into prepared pan. Arrange apple slices over the top of the batter in a circular pattern. Eat any left over slices. Sprinkle apple slices with sugar, cinnamon, and cut up butter. Bake for 40-45 minutes until golden brown. Enjoy warm cake with a glass of cold milk.
